This 100% Chenin Blanc (Pineau de Loire) was assembled from three different cru of the property*: Clos le Vigneau; les Gués d'Amants; la Gaudrelle. Hand picked, each is vinified in its own separate manner to bring out its specific character (40% botrytised grapes) then blended together just prior to bottling. Produced from 14 hectares of the best cru classé vines of the appellation, averaging 40+ years of age; one Ha is 95+ years old.
A slow press over 4 hours released the natural richness (11% sugar) followed by a 12 week cool fermentation using only indigenous yeasts was carried out in 600L old oak barrels that are 30 to 60 years old (no new wood). Settled and filtered twice prior to final development sur lies and fined in either vats and barrels until it was bottled in May 2009.
A sec-tendre, light golden-yellow colour with green reflections; possessing a fine, yet discreet nose of apricots, plums, and flowers. Very clean with a perfect acid balance. Mouth filling, round, soft and supple, complex; ample length. A wine that can be best enjoyed now with grilled fish or oysters; it will further develop for years to come.
