Grappa

"Good grappa should never be chilled and bad grappa should never be served."   - jhs

Grappa is made from distilled grapes/grape skins (pomace) left over from the pressings from wine  30-40% percent of the juice used in blending lesser wines and distilled to make fine Italian grappa.  This is not always the rule. Much grappa, both inexpensive and expensive, is made from grapes that have been completely pressed resulting in only dried pomace being used in the distillation process. Often the stems and pips are used in the distilling process resulting in harsher unclean grappa.

However, making grappa from grapes with 30 to 40 percent of the juice left in them, the flavours, aromas and the quality of the grape are left over for the distilling process. Grappa can be distilled in two ways;

1) Industriale - Usually made with dried must, skins, seeds and stems; bulk boiled and cooled, then distilled.
Result: Strong, bitter, burning, poor flavour and usually inexpensive grappa that tastes like kerosene.

2) Artigianale (Craftsman/Artisan) - Slowly distilled from grapes with high juice content (40%) drop by drop. Vapour rises and then is cooled in a long vertical tube.  The heads and tails (first and last distillates) are discarded - only the body is used
Result: Flavourful, beautiful aroma of grapes used, soft and not harsh with a delicate or robust taste.
Lastly, there a grappa for everyone; if you do not like the first one you taste, try another and remember to enjoy your grappa at room temperature.

You do not drink the bottle - only its contents!

   

Grappa di Amarone

After the production of the Montresor AMARONE from the dried Corvina Veronese, Rondinella, and Molinara grapes, the lees, comprised only of the soft pressed grapes and skins, are double distilled on the Cavalcaselle Estate and made into Grappa.A traditional style Grappa; aged one year in oak barriques it is slightly golden to the eye; a nose of peach blossoms, raspberries, and pomegranates; it is smooth, rich, and complete on the palate, not least bit harsh or coarse. Presented in a classical 700 ml bottle, Grappa di Amarone is an exceptional conclusion to a wonderful meal.

Grappa di Ruchè di Castagnole Monferrato

Casa Brina

This grappa has been distilled in traditional copper discontinuous alembics using the pomace of the same Ruchè grapes that go into the making of Casa Brina Ruchè di Castagnole Monferrato. The intensity of the perfume and the particular aromas already present in the pomace give this grappa a unique aromatic quality.

The label is a artistic picture of an old vine.
