Chardonnay - Bianco Della Luna 2002
(the White of the Moon)
Only 10,000 cases of this 100% Pinot Chardonnay is produced annually on the Montresor Cavalcaselle Estate on Lake Garda. Harvesting begins at the setting of the new moon of August. A soft pressing by horizontal pressing equipment yields a fine must that is cleaned and then fermented at controlled temperature. Wood ageing is not used. The inherent sparkle is achieved through the natural fermentation. The wine has a white brilliant colour with greenish nuances. A fine and persistent perlage, and a typical bouquet of unripened apples. Its dry, spritzy and harmonic personality makes it an excellent aperitif suitable for delicate entrees and fish dishes. Best served at 8 degrees Celsius.

Capitel della Crosara 2005
Valpolicella Classico D.O.C. Ripasso
Montresor produced less than 2000 cases from Corvina Veronese, Rondinella, and Molinara grapes hand harvested in October on the Capitel della Crosara Estate located in the Negrar commune of the Valpolicella Region. The grapes for this single cru wine were grown using traditional methods eliminating the use of herbicides and insecticides.
A traditional red wine vinification method was used with the unusual ripasso practice of fermentation sur lies of the Amarone. The wine was then aged 12 months in Slovenian Oak casks and a further 3 to 4 months in French Nevers barriques. Deep clear ruby red colour. A bouquet with typical almond and cinnamon tones. A strong dry velvety taste with scents of cherry, musk, spices and wood. It is most suitable with hearty entrees, roasts of white and red meat, poultry, boiled beef dishes, and hard cheeses.
