Thou Bianc 2002

D.O.C. Chardonnay

Thou bianc (white tufa in Piedmontese dialect) is the fruit of two vineyards, one in the village of Neive in Langhe and one in Moncalvo in Monferrato, both in prime positions on chalky tufaceous soil. Thou is a pure Chardonnay never been in wooden barrels during its vinification process. The grapes are fermented at controlled temperatures in stainless steel tanks. Maturation takes place in the same tanks on the lees and continues in the bottle for four months prior to shipment.

Drink with good food suitable to white wine, a hit with Chinese and oriental cuisine.

Libera 2002

Barbera d’Asti D.O.C.

Noted as one of the finest and most innovative producers of Barbera since 1911, Bava produces a range of unique and exquisite wines from the family vineyards.Libera is the youngest and most feminine of the Bava Barberas produced from the young vines of Casina PianoAlto di Crena.  It has a rich dowry of perfumes and character without barrique ageing.  Libera has an intense, deep red colour with ruby and violet nuances; a nose that is rich, almost balsamic, with hints of wild plums, cherry jam, pepper and vanilla.  On the palate, the wine is full and round, elegant and velvety.  A most pleasurable organoleptic experience.

Stradivario 1999

Barbera d’Asti D.O.C.

This is of one of those “flagship wines” that has repositioned Barbera as one of the great wines of the world.  Produced from the best  grapes from vines planted in 1952 on the most ideal slopes in the Basso Monferatto region of Piedmont. This wine, after a traditional fermentation, was initially aged for one year in new French oak followed by another year in the bottle prior to release. An unfiltered heavyweight Barbera, it is intense deep ruby red in colour with a nose of rich fragrances and delightful tones of vanilla and spices.  It has a palate that is long, full, velvety and very elegant.   Served at 18 degrees Celsius, it is best when decanted carefully.  When young, pair with red meats and mushrooms; when older, strong meats and game and well-matured cheeses.  Although very enjoyable now, it can age nicely in this format for 10 to 12 years.

Violino 1997

Barbera d’Asti D.O.C. Superiore  

This BAVA 3.0L double magnum in the standard bottle is better known as Stradivario (see above). In this format, is has an ageing potential of 14 to 16 years. After a traditional fermentation, this wine was initially aged for one year in new French oak followed by another year in the bottle prior to release. An unfiltered heavyweight Barbera, it is intense deep ruby red in colour with a nose of rich fragrances and delightful tones of vanilla and spices.  It has a palate that is long, full, velvety and very elegant.   Served at 18 degrees Celsius, it is best when decanted carefully.  When young, pair with red meats and mushrooms; when older, strong meats and game and well-matured cheeses.

Violoncello 2001

Barbaresco D.O.C.G.

This is Barbaresco!  Garnet red in colour, it has complex and intense nose with touches of vanilla on slight wood notes. On the palate, it is warmly alcoholic, austere and velvety with elegant tone of its 3 years ageing on French oak. This wine will benefit from decanting; it is best served slightly below room temperature to allow the flavours to develop and open fully as it warms.

The ageing potential is probably better than the purchaser's; this wine will go on for decades.

Casa Brina

Casa Brina is more than a wine producing company. In fact, it has hosted conferences, put on cultural, artistic and musical events, and even published books for 20 years. Today, it is a cultural centre for the Monferrato and Langhe districts and its production can be best described as vino-cultura, a lively and immediate way of discovering a region through its traditions and its finest products. Casa Brina is the Bava family’s artistic centre. The buildings are based on a courtyard-based farmhouse typical of the area. The original cellars, constructed in 1722, are located in the centre of the village of Cocconato.  They have now been restored to hold bottles of course but. also act as a venue for concerts and conferences; as an exhibition centre for old wine making implements and an unusual collection of Altar wines; and of course, as regular cellars full of barriques and barrels for wine ageing. Casa Brina also comprises a guest house, and part of the complex forms the family home.    

An innovative way of looking at wine that is made for a new, quality conscious  public that is looking for quality in all aspects of life.  All are limited productions, but much sought after for their graphic and pictorial qualities.

 

Gavi D.O.C.G. 2004

Made from the 100% Cortese di Gavi grapes which are grown in the regions of Gavi and Novi in southern Piemonte. It is a pleasant wine, straw-yellow to pale yellow with greenish reflections in colour possessing a delicate bouquet. Dry and balanced with a pleasant smooth sensation.  Fresh and floral with a harmonious taste.  It is not wood aged and is best consumed within 2 years of bottling  It is recommended to accompany all kinds of pasta, white meats, fish, fresh cheeses and all the delicate recipes of the "cuisine naturelle."

Ruchè di Castagnole Monferrato D.O.C. 2003

Casa Brina (the Bava family's private estate) is one of very few wine growers to produce this rare and unique wine from Piemonte. Only 2000 bottles were made from hand selected 100% Ruché grapes fermented in the traditional manner then aged for one year prior to release. Ruby red in colour with violet reflections and some orange tinges.  A medium bodied wine with personality - a powerful bouquet; fruity, dry, well-balanced, and moderately tannic.  The intense aromatic qualities of the grape are instantly recognizable. The soft balance and spicy bouquet of this delicate wine means it will go well with authentic international cuisine, including vegetarian dishes, duck, goat’s cheese and oriental food.

Barolo D.O.C.G. 1996

Produced from hand selected 100% Nebbiolo grapes from the vineyards surrounding the village of Castiglione Falleto.  Soft pressed with extended skin contact and a traditional fermentation results in a wine that is mellow and velvety; shining and garnet red colour with orange tints.  A deeply scented wine, it develops from dry violet and wild rose to tar, fading with an ethereal, very unique bouquet.  The resulting taste is full, pleasantly persistent and very well balanced. Aged for a minimum of three years in oak and chestnut casks prior to bottling where it rested another 18 months prior to release.  It will age for a long time to come. Best enjoyed with many international dishes, braised meats, game, aged cheeses.

Barolo Chinato Cocchi

Barolo Chinato is a special wine produced with D.O.C.G. Barolo, flavoured with quinine bark, rhubarb, and gentian, of which extracts are obtained through maceration at room temperature, with a final addition of spices, including selected cardamom seeds.Created in Piedmont in the last century, it quickly became popular because of its attractive bitter sweet taste and above all because of the Barolo name, which firmly put it into place as a prestigious product in the quinine flavoured alcohol range.Giulio Cocchi’s original recipe invented in Asti in 1891 is still today the “best kept secret” of Barolo Chinato, in fact it attracts many imitations.Today’s consumer is the “educated young” who appreciate the balance and harmony of the aromas, the immediately pleasing taste and the long finish of this product of infusion with 21 herbs and spices mixed in precise proportions with a great wine.  It belongs to the category of after dinner drinks such as Port, Marsala Virgine, or late harvest wines.
